  1. Set ANOVA Sous Vide Precision Cooker to 141°F/60°C.
  2. Season roast liberally and place in a vacuum bag or ziplock bag (make sure to remove all the air).
  3. Place roast in Sous Vide bath and cook for 7 hours.

Finishing Steps

  1. Remove roast from water and pat dry.
  2. Set Oven to 400°F/204°C. Rub olive oil or spray pam all over roast
  3. Place roast in oven and cook for 20 minutes to get that exterior crispness.
