Ingredients
- 1# baby white or red potatoes
- 1/4 cup Chicken or beef stock
- 1 tbsp Thyme
- 1 onion chpped
- 1/2 teaspoon sugar
- 1/4 cup white vinegar
- 1 tblsp whole grain mustard
- 1/4 cup parsley
Directions
- Set your Anova Sous Vide Precision Cooker to 194ºF / 90.0ºC
- Warm SV to 194*F
- Place potatoes, thyme, broth and 1/4 teaspoon salt to SV bag and seal
- Cook for 75 mins

- Add 1 teaspoon olive oil to skillet. Add pnion and cook until softened.
- Add sugar, stir until dissolved.
- Add vinegar and liquid from potatoes SV cooking.
- Reduce in simmer
- Off heat add mustard then add potatoes and season to taste.
