  1. Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
  2. Rub loin with your favorite spice mix. Score fat section with a knife.
  3. Place loin in bag using water emersion.
  4. Cook for 2.5 hrs at 140 or 137 if you like it a bit more pink

Grill/stove Top

  1. Pull loin out and dry. Let sit 10 min.
  2. Preheat cast iron skillet on grill or stove on high.
  3. Add butter, garlic, thyme to pan. Add loin and sear on all sides for one min each. Spoon butter and aromatics over loin.
  4. Remove and let sit for 10 min then slice.
