Ingredients
- Pork belly - approximately 2kg.
- Salt
- Pepper
- Garlic - chopped
- Onion- sliced
- Coriander seeds
- Bay leaf
- Fish sauce
Directions
- Score the skin season with enough fish sauce to just lightly coat the skin.
Turn over and layer seasoning on the meat side.
Place in bag and vacuum seal.
- Place in the water bath at 165°F for 24 hours.
- Remove from water bath and drain fluid from bag. You can save the fluid to use in future cook as a broth.
Remove the meat and place it on a rack. Pat dry, season with salt, and place in the fridge overnight.
Finishing Steps
- Preheat oven grill to 240°C. Place in the oven to crisp the skin.
