  1. Score the skin season with enough fish sauce to just lightly coat the skin. Turn over and layer seasoning on the meat side. Place in bag and vacuum seal.
  2. Place in the water bath at 165°F for 24 hours.
  3. Remove from water bath and drain fluid from bag. You can save the fluid to use in future cook as a broth. Remove the meat and place it on a rack. Pat dry, season with salt, and place in the fridge overnight.

Finishing Steps

  1. Preheat oven grill to 240°C. Place in the oven to crisp the skin. Enjoy the crispy skin and incredibly tender meat full of flavour!
