  1. Seal in a plastic bag the meat with salt and spices
  2. Cook for 2h at 55/131.
  3. Let the meat rests for 15-30 minutes, then open the bag, remove the liquid end dry in cooking paper while heating a cast pan. When hot, cook 2min per side then serve.

  1. cut and serve with side dishes as potatos or vegetables.
