Ingredients
- 1.5kg Picanha
- Salt
- Pepper
Directions
- Cook for 8 hrs at 55
- Wrap in paper towel and let it rest for 15 minutes in the fridge
- Massage salt & pepper, wrap in paper towel and let it rest for 30 minutes in the fridge
- Place a cast iron pan in the oven and turn it to max temp on grill
- Place the steak with fat on top for 3 minutes and turn over for additional 2 minutes
- Let it rest for 10 minutes
- Cut across the grain
