Ingredients
- USDA Prime Tenderloin
- Garlic Cloves
- Fresh Rosemary
- Fresh Thyme
- 1 Tbsp Butter
- Peanut Oil (for searing)
- Kosher Salt and Cracked Black Pepper
Directions
- Generously salt and pepper tenderloins. Add smashed clove of garlic, herb sprigs and meat to a food saver bag. Cook at 130.5 for at least 45 minutes.
Finishing Steps
- Remove meat from bag, pat dry with paper towel. Re-salt. Add meat, garlic and herbs to a searing hot cast iron skillet with peanut oil. Sear on all sides. Prior to final side, add butter. Sear remaining side while spooning herbed butter over meat. Serve immediately.
