Perfect medium-ish rare steak
This is the temperature my good friends on YouTube use on their channel, sous-vide-everything.

Ingredients
- 1”thick cut steaks ;-)
- Montreal steak spice
- Freshly ground pepper
Directions
- Shake that Montreal spice on your steaks, make sure it’s smothered ;-)
- Grind some pepper on your steaks, on both sides
- Vacuum seal and if they are bone in, use a little parchment paper over where the bones are (so it doesn’t hurt your bag)
Finishing Steps
- You can use a Searzall, a cast iron pan, and a high temperature smoker. My fav is the Smoker option, I set it to 500f, and in less than 5 minutes they’re perfect, and Smokey ;-)
