Directions

  1. Cut up peaches and place in 1 qt Mason jar
  2. Pour everclear over peaches.
  3. Seal lid. Immerse in 130° bath for 2.5 hrs.
  4. Let cool.

Finishing Steps

  1. Make simple syrup from 1/2 cup water and 1/2 cup sugar. Let syrup cool
  2. When infusion and syrup are cool, open jar, and pour infusion into a container, straining out pieces of peaches, letting as much liquid drain out you can
  3. Add syrup to infusion, and mix thoroughly
  4. Bottle.
