In the bag: Ponzu Garlic Soy sauce TJ’s pineapple sesame teriyaki A little BBQ sauce Score the fat and other side of you want. Usually pretty good Let sous vide for over 4 hours. Start up the grill high af and make sure it’s clean. Take out of sous vide after however long. Some fat might be all rendered and nasty. Pull or cut it off. Pat dry. Apply honey, hot sauce, and seasoning. Maybe a lil oil. Sear for like a minute, fat on top. Make sure you got a good bark. Do the same on all sides. Use long tongs so you don’t burn ur arm hair. When you have a good sear on all sides, turn the grill off and leave it in the hot grill for like 30 seconds. Cut super thinly and keep the juices after cutting to use as a gravy or whatever.
