  1. Coat all sides with seasonings
  2. Add to sous vide for 2 - 2 1/2 hours
  3. Remove and pat dry
  4. Reseason with salt and pepper
  5. Heat a cast iron with a few teaspoons of ghee
  6. Sear the steak for about 1 minute on each side.
