  1. Season with garlic, salt and pepper before putting in sous vide
  2. Heat pan medium high with neutral oil like grape seed. Season steaks with salt and pepper (a lot of this will cook off during searing this is why you season again) Sear with aromatics (rosemary or thyme) garlic (smashed). When it’s smoking place steak in the pan (high pans help with splatter) sear 45 seconds and then place garlic, rosemary or thyme with tablespoon of butter. Let sear 15 more seconds, flip, then sear 1 minute while basting with a spoon over top. Tilt the pan to get juices in a position to spoon over. Tilt pan to sear side of cap fat for 30 seconds. Pull off heat and put on plate or board to rest for 5 mins
  3. Cut for placement
