Ingredients
- 650g fresh whole oranges (including peels), cut into quarters
- 550g water
- 450g sugar
- 2 whole cloves
- 4g cinnamon sticks
- 1 whole vanilla bean, split and scraped
Directions
- Combine all ingredients in a vacuum bag and seal. Cook and sous vide at 90°C (195°F) for 4-6 hours or until oranges are very soft. After this time, prepare an ice bath. Transfer the back to the ice bath to chill completely.
Finishing Steps
- Strain the mixture through a fine mesh strainer, discarding solids.Transfer the strained liquid to an airtight container and reserve in the refrigerator.
