  1. Combine all ingredients in a vacuum bag and seal. Cook and sous vide at 90°C (195°F) for 4-6 hours or until oranges are very soft. After this time, prepare an ice bath. Transfer the back to the ice bath to chill completely.

Finishing Steps

  1. Strain the mixture through a fine mesh strainer, discarding solids.Transfer the strained liquid to an airtight container and reserve in the refrigerator.
