Ingredients
- nz king salmon
- olive oil
- 400ml water
- 40g salt
- 20g sugar
Directions
- 1. brine salmon for 45 minutes
2. remove salmon from brine and pat dry
3. bag salmon with olive oil
4. cook salmon for 60 minutes at 40 degrees celsius
5. remove and place in ice bath immediately
Finishing Steps
- remove from bag and top with chilled caviar and dress with vegetables
