New Years Eve Steak
My first attempt at sous vide; had a good flavor, and was tender & moist.

Ingredients
- 4 Costco top sirloin steaks, approx. 2 inches
- Salt
- Pepper
- Garlic powder
- Onion powder
- Bacon & chive powder
Directions
- Preheat water bath to 135
- Pat steaks dry and season to taste
- Place steaks in single layer in ziploc freezer bags and seal with water displacement method
- Cook in water bath for 2 hours
Finishing Steps
- Preheat cast iron skillet on high or medium-high
- Add a small amount of avocado oil to skillet
- Remove steaks from bag and pat dry
- Add butter and garlic cloves to skillet
- Spoon butter on top of steak while the bottom sears
- Flip steaks and continue spooning butter until completely seared
- Add steaks to skillet
