  1. Slice onion, mince garlic, carrot, squeeze lemon, and apply mojo marinade to the pork butt directly in package and seal tight.
  2. Sous vide At 165F for 24hrs
  3. Remove from plastic and dust in light salt (do not discard the mojo)
  4. Sear at Med/Hi in searing pot for no more than 5 minutes.
  5. Reapply 1/2 onions/marinade left in plastic and let simmer for 5 minutes on low.
  6. Boil down remaining marinade and serve with yellow rice
