Miso Glazed Filet Mignon

Ingredients
		- 3tbsp chopped green onions or scallions
 
		- 2tbsp miso paste
 
		- 1tbsp rice wine vinegar
 
		- 1tbsp honey
 
		- 1tbsp soy sauce
 
		- 2tsp Dijon mustard
 
		- 1tsp dark sesame oil
 
	
Directions
		- Combine ingredients in a zip-top bag and mix thoroughly. Add steaks and marinate in the refrigerator, at least 4 hours, preferably overnight.
 
		- Cook at 139.5 for 1 hour for a medium rare steak.
 
	
Finishing Steps
				- Remove from the bag and blot dry with paper towels. Save the remaining juice.
 
					- Add some butter to a hot pan and sear both sides of the steaks, only 30 seconds a side or so if you have the pan hot enough.
 
					- Add the juice from the bag to your searing pan and reduce for a few minutes to use as a gravy.
