  1. Combine ingredients in a zip-top bag and mix thoroughly. Add steaks and marinate in the refrigerator, at least 4 hours, preferably overnight.
  2. Cook at 139.5 for 1 hour for a medium rare steak.

Finishing Steps

  1. Remove from the bag and blot dry with paper towels. Save the remaining juice.
  2. Add some butter to a hot pan and sear both sides of the steaks, only 30 seconds a side or so if you have the pan hot enough.
  3. Add the juice from the bag to your searing pan and reduce for a few minutes to use as a gravy.
