Ingredients
- 1kg sirloin
- Coarse Salt
- Coarse ground Pepper
Directions
- Sharpen your knife and cut the sirloin into 3 equal parts, from the side with the fat
- Apply salt and pepper on both sides of each steak, be generous but don't overdo it
- Vacuum steal the steaks
- Sous vide for 2 hours at 57°c
Finishing Steps
- No need to let the steak rest before this step.
Preheat a grill pan to medium-high temp a regular pan will do too, and sear the steak while burning the top side with a burner until you like the color.
Give extra attention to the fat.
Flip the steak and repeat.
* feel free to add a little bit of butter on top while searing.
- Let the steak rest for 10 minutes, then serve.
