Ingredients
- salt
- 600g dry aged marbled sirloin
Directions
- cook for 1:30 at 49.0
- wrap in paper towel, let it rest for 10 mins in the fridge
- massage salt to both sides of the steak, wrap with a new paper towel and let it rest for 15 minutes in the fridge
- heat a cast iron pan for 10 minutes
- cook the steak for 3 minutes, turning the steak every 45 seconds
