  2. wrap in paper towel, let it rest for 10 mins in the fridge
  3. massage salt to both sides of the steak, wrap with a new paper towel and let it rest for 15 minutes in the fridge
  4. heat a cast iron pan for 10 minutes
  5. cook the steak for 3 minutes, turning the steak every 45 seconds
