Medium Rare Filet
Add 1 filet, garlic, fresh thyme, fresh rosemary, and S&P with a drizzle of avocado oil to a vacuum seal bag and seal. Let stand in the fridge for a couple hours. Cook at 139 degrees for 1 1/2 hours or until meat reaches 130 degrees. Get skillet hot, add butter and avocado oil to skillet. When butter is fully melted and bubbly add one steak at a time. Sear for one to two mins. Per side. Enjoy

Ingredients
- 1 fresh sprig rosemary per steak
- 1 fresh sprig thyme per steak
- 1 Teaspoon minced garlic per steak
- S&P to taste
- 4 - 1 1/2 inch thick filet
- Real butter
- Avocado oil
Directions
- Vacuum seal ingredients and place in fridge for a few hours.
- Set your Anova Sous Vide Precision Cooker to 139.0ºF / 59.4ºC.
- Cook for 1 1/2 hours or until meat reaches 130 degrees
- Sear in butter 1 min each side, baste with melted butter while searing.
- Enjoy
- I use an enamel coated cast iron pan. Get nice and hot, add a couple tablespoons of avocado oil and two tablespoons salted butter.
- Place steak in butter and baste while searing. 1 min per side
- Let steak rest for 15 mins covered with foil
