Directions
- Coat in olive oil
- Season as desired
- Cook in Anovo, 125 degrees, minimum 50 minutes
- Sear on grill, as hot as possible (700-900 on Kamado) 1 minute per side
- Wrap in aluminum foil and rest for 5 minutes
