		- Filet mignon  
 
		- Salt
 
		- Pepper
 
		- Steak seasoning (St. Elmo’s)
 
		- Oil
 
	
Directions
		- Season with salt and pepper and let get to room temp
 
		- Sous vide at 130f for 1 hr 
 
		- Remove, pat dry
 
	
Finishing Steps
				- Drizzle with olive oil, season with steak seasoning and sear in hot cast iron with a tablespoon of butter on all sides
