When held at for 2 hours at 55°C (131°F) there is enough time to pasteurise the beef.

- Good quality beef burgers
Directions
- Seal in bag
- Cook at 55°C (131°F) for 2 hours
- Add extra 30 mins if burgers were frozen
Finishing Steps
- Dry and sear in a very hot pan as quickly as possible 1-2 minutes on each side
- Serve how you like it
