Mediterranean Sous Vide Egg Bites
Delicious, savory sous vide egg bites. A riff on the more traditional Starbucks sous vide egg bite recipes out there!

Ingredients
- 6 large eggs
- 3/4 yellow onion, carmelized
- 1/2 cup crumbled feta cheese
- 1/2 pound of spinach, sauteed
- Chopped Greek olives, to taste
Directions
- Set your Anova Sous Vide Precision Cooker to 172ºF / 77.8ºC
- Mix together the eggs and feta cheese in a blender or food processor until the mixture is homogeneous.
- Evenly distribute the egg mixture into 6 identical mason jars.
- Once your eggs are poured, add carmelized onions, sauteed spinach and chopped olives to each one. Stir to distribute the mixture evenly inside the jar.
- Seal the jars, making sure they are "fingertip" tight! Otherwise, you may run the risk of the jars cracking from pressure.
Once sealed, drop them into the water bath for 1 hour.
