Ingredients
- 3-4 large Russet potatoes
- 1 stick butter
- Salt
- White pepper
- 1 cup heavy cream
Directions
- Set your Anova Sous Vide Precision Cooker to 194ºF / 90.0ºC
- Peel potatoes and slice into thick rounds
- To vacuum seal bag add all ingredients
- Cook until potatoes are soft 30-40 mins
Mash
- Pass potatoes through a fine mess sieve into a bowl and fold only until incorporated
