Very delicious and yet, very easy to prepare drink. By using the peel instead of the pulp, you get more aroma without sacrificing the appearance. Use very ripe mangoes to get the best flavor.

  1. Remove peel and cut into small strips
  2. Place mango peel in a sous vide bag, along with the rum. Let infuse for two hours.

Finishing Steps

  1. In my experience, the best way to serve this drink is on the rocks. Add one teaspoon of simple syrop for a each 50ml of rum to bring up the mango flavor.
