Ingredients
- Tri Tip Roast (Prime works great)
- Rub of your choosing
- 1/4 Cup Beef Broth (Optional)
Directions
- Trim Tri Tip as needed, run with your fave, vacuum or capillary seal, immerse and cook at 131-145 for 6-24 hours... basically, suit yourself on doneness and time... once done in immersion drain liquid and retain. I like to season one more time at this point. You could pat dry as well.... now sear... again your call, BBQ, Griddle, Cast Iron, Torch or whatever your style is...
Finishing Steps
- After searing well... put some Ghee or Salted Butter on the roast, cover and let rest 5-10 mins.
I like to apply some finishing salt just before slicing.
