  1. Cut open lobster tails and carefully pull out of shell making sure not to pull the shell off completely. Set the meat on top of the split shell
  2. Salt and pepper the tails. Then put back inside the shell.
  3. Put slices of lemon on the bottom of the bag. Set lobster tails on top of sliced lemons. Put slabs of butter on top of lobster tails and vacuum seal. Double bag.
  4. Cook for 1 hour at 140°C
  5. Pull the cooked lobster out of the shell on and place on top.
  6. Sear with a kitchen torch and melt more butter on top. Garnish with parsley.
