Ingredients
- 300g pork liver
- 150g ground pork
- 40g butter
- 1 egg
- 100g onions
- Fresh thyme
- Fresh basil
- Fresh parsley
- Fresh rosemary
- Paprika
- Brandy
- Salt
- Pepper
Directions
- On low fire sauté the onions until translucent.
- Add ground meat and cook it until it browns.
- Flambe the meat and onions with a little bit of brandy.
- Add butter and wait until it melts.
- Put the meat aside and in the same pan start cooking pork livers, each side for 30 seconds or until it browns.
- Add ground meat, pork livers, egg and all the spices in a food processor and start grinding the meat until it becomes like a smooth batter.
- Divide the paté into small jars.
- Transfer the jars in the water bath and cook it.
Finishing Steps
- Let it cool down and serve it cold.
