Ingredients
- Thawed or fresh pork tenderloin
- Lemon (juice and zest)
- Salt
- Olive oil
- Minced garlic
- Butter
Directions
- Combine all ingredients except butter in a sous vide bag and marinate pork in fridge for 2-3 hours. Do not marinate overnight as the acidity of the lemon will make your pork too soft.
- Preheat water with ANOVA and add sous vide bag to water when ready. Cook the pork in the marinade.
- When the cook time is complete, remove pork from the sous vide bag. Pat dry and rest. Reserve the bag juices.
Finishing Steps
- Heat a heavy pan in medium heat with a little bit of canola oil.
- Sear the pork for 30 seconds on each side.
- Pour the bag juices into the pan and use a spoon to baste pork with the lemony marinade.
- Remove pork from pan and add butter to leftover juices to thicken into a sauce. Pour sauce on top of pork on serving plate.
