  1. Salt and pepper chicken
  2. Top each thigh with Basil leaf, Rosemary sprig, and lemon slice
  3. Insert and seal in vacuum-sealed bag or in ziploc using immersion method
  4. Insert bags into bath for 2 hours
  5. Cover with foil to optimize temperature and minimize evaporation

Finishing Steps

  1. Remove chicken from bag reserving juices
  2. Season with lemon garlic seasoning
  3. Sear in cast iron pan to golden skin
  4. Add reserved juices to pan for last 2 min
  5. Add Marsala to juices
  6. Serve thighs with sauce
