Ingredients
- Chicken thighs
- Salt & pepper
- Basil - fresh leaves
- Rosemary - fresh sprigs
- Lemon - sliced
Directions
- Salt and pepper chicken
- Top each thigh with Basil leaf, Rosemary sprig, and lemon slice
- Insert and seal in vacuum-sealed bag or in ziploc using immersion method
- Insert bags into bath for 2 hours
- Cover with foil to optimize temperature and minimize evaporation
Finishing Steps
- Remove chicken from bag reserving juices
- Season with lemon garlic seasoning
- Sear in cast iron pan to golden skin
- Add reserved juices to pan for last 2 min
- Add Marsala to juices
- Serve thighs with sauce
