Lamb Rib Chop
Light & refreshing marinade combined with earthiness of the lamb is a great dish. Pairs well with a light pasta or parsley salad.

Ingredients
- 1 tbsp Filipino sinigang mix (or tamarind powder) mixed with 1/2 tbsp water
- 1 tbsp veg oil
- 1/2 bottle heffeweizen (wheat beer) (approx 1 cup)
- 1.5 tbsp orange blossom honey
- 4 cloves minced garlic
- 1 tsp sea salt
- 1/2 tsp white pepper
- Lamb rib chops
Directions
- Mix veg oil + tamarind
- Add remaining ingredients to tamarind oil paste.
- Put lamb rib chops into bag & add marinade.
- Place in sous vide for 90 mins
- Sear on cast iron skillet with a little bit of vegetable oil on medium high heat to caramelize. Serve immediately
