  1. Chop a whole garlic into small chunks and mix well with herbs, cumin, salt and pepper
  2. Cover the lamb leg well with the mixture and put it into the water bath
  3. After 6 hours, let it rest for 10 minutes while you preparing the sauce.
  4. Warm up the butter and add in the chopped onion when it's sizzling.
  5. Stir fry the onion until its brown colour. Add in the lamb leg and sear each side for 1 min.
  6. Finally add in the juice from the bag into the pan to warm it up. Serve the sauce separately.
