Directions

  1. Rub lamb with seasonings and olive oil
  2. Add seasoned lamb to ziploc, top with a sprig or two of mint
  3. Seal and marinate for up to 24 hours
  4. An hour before cooking, let the lamb rest on the counter to come to room temperature
  5. Bring the sous vide to temperature, and add the lamb

Finishing Steps

  1. Blot gently with paper towels to remove surface moisture
  2. Sear or broil on a hot grill or cast iron skillet
  3. Baste with butter
  4. Let rest for ~10 minutes before slicing.
