Key lime cheesecake

Ingredients
- Filling
- 16 oz cream cheese
- 1 cup sugar
- 2 eggs
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1 tablespoon lime juice
- 1 tablespoon of lime zest
- Crust
- 1 package Graham crackers, about 8, about 2 cups
- 1 stick butter
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Directions
- Preheat oven to 350
- Crush the graham crackers and mix with the rest of crust ingredients.
- Put crust in six 8 oz mason jars and pack down. About 1/4 inch thick.
- Bake jars at 350 degrees for ten minutes.
- Mix cream cheese and sugar to consistency of choice( I like some small chunks).
- Add the rest of the filling putting eggs in one at a time.
- Fill the jars to the first ring leaving about 1/2 from top.
- Tighten jars finger tight only. So some air will escape during cooking.
- Cook for 1 hour and 30 minutes.
- Let cool on the counter for 30 min to an hour.
- Place in refrigerator for 2-4 hours.
