Johnny’s Awesome Egg Bites
Starbucks has nothing on these! They are about twice the size and cost A LOT less! The texture is creamy and the flavours are amazing!

Ingredients
- 12 Extra Large Eggs
- 1/2 cup of Ham (diced small)
- 1/4 cup of Green Onions (finally chopped)
- 1/2 Red Pepper (finely chopped)
- 1/4 cup + of Tex-Mex shredded cheese
- 1/2 tsp of Salt + or - to taste
- White Pepper to taste
- Butter or cooking spray
Directions
- Preheat water bath to 170F with Anova Pro
- Butter the interior of twelve 125ml jars for which you have the appropriate sealing lids, or use non-stick cooking spray.
- In a mixing bowl, scramble the eggs
- Add salt and mix well
- Using a ladle (or whatever works best for you), evenly divide the scrambled eggs between your 12 buttered or sprayed jars (approx. 1/4 cup per jar)
- Evenly divide the chopped green onion, diced pepper, diced ham and cheese between the 12 jars. Feel free to use more cheese if you like it cheesier!
- Making sure there’s approximately a 1/2” air gap at the top of the jars and keeping the edges clean, seal the jars with the appropriate lids.
- Add all the jars into your pre-heated water bath and set the timer to 50 minutes
- Once completed, remove from water bath with canning tongs and use a towel to dry the jars.
- Remove the lids and flip the jars upside down over a serving plate. The eggs should side out easily onto the plate but if they don’t because you forgot to butter your jars like I did, just use a knife around the edges and that should do the trick.
