  1. Set the Anova precision cooker to 150F for 2hrs.
  2. Take chicken out of store package and spread into a large bowl. I used a Costco pack of chicken thighs and a large metal bowl.
  3. Evenly sprinkle ½ tsp each of onion salt, kosher salt and ground pepper, and 1 tsp of all the rest of the ingredients including the lemon juice.
  4. Mix well to ensure even coverage on all parts of the chicken thighs.
  5. Now vacuum seal the thighs in a few bags making sure to lay them out evenly in the bags. (I used 3 bags with 8 thighs per bag.)
  6. Set the thighs in the rack and put into the water bath.
