Jeff and Stacey’s Lamb Shoulder Chop
Lamb is my comfort food, and a nice chop really makes for a delicious dinner.

Ingredients
- 12 to 16 Oz lamb chop or steak
- 2 garlic cloves
- 1 Tbsp butter
- Fresh or dried rosemary
- Fresh or dried thyme
- Sea salt
- Fresh ground pepper
Directions
- 1.) Salt and pepper the chop on both sides
- 2.) Add rosemary, thyme, and garlic to both sides
- 3.) Add half the butter to both sides
- 4.) Place in a vacuum bag or use the water immersion method as I did here
- 5.) Cook for 5 hours at 145 degrees F
- 6.) Remove the chop from the bag and save the liquid (I use it in ramen or to make a reduction)
- 7.) Sear each side on high heat for about a minute
- 8.) Serve with roasted vegetables (I prefer asparagus and broccoli)
