Beef basically cooked until it is pink throughout. Rub the beef in 2 to 3 tablespoons of kosher salt put it in the plastic bag with 2 tablespoons of lemon juice and a little olive oil and start. Once ready throw into oven convection roast at 450 on a rack for 12-15 minutes
