  2. Let the meat sit in the pot in a vacuum bag or ziplock with no air for 60 mins

  1. Use hot oil in a pan and sear for finished outer texture. You can also use an iron pan and no fat/oil/butter for best result. Turn the meat every 10-20 secs if this methiod is preferred
