“Spam” is amazing for meat eaters; but if you want a healthier version, it is so easy to make using your sous vide. The picture shows a “Spam Silog” - a typical Filipino breakfast that has protein + sinangag (fried rice) + itlog (egg). Let me know if you try it.

Ingredients

Directions

  1. Set your Anova Sous Vide Precision Cooker to 79.5ºC / 175.1ºF
  2. Mix all spices together and add water to dissolve.
  3. Prepare your own ground meat or store-bought ground meat
  4. Mix in the meat and spice mixture by hand for 3-5 minutes to make it homogeneous.
  5. Assemble in greased loaf pan or cylinder. Press down to remove any air pockets.
  6. Place in your bag and sous vide for 79.C for 2 hours.
  7. Remove from bath and let them cool down. Refrigerate for at least 4 hours to overnight.

Finishing Steps

  1. Fry in a little oil and serve with garlic fried rice/ pickled vegetables or pandesal (buns)
