Homemade DIY Spam
“Spam” is amazing for meat eaters; but if you want a healthier version, it is so easy to make using your sous vide. The picture shows a “Spam Silog” - a typical Filipino breakfast that has protein + sinangag (fried rice) + itlog (egg). Let me know if you try it.

Ingredients
- 2 kg Ground pork
- 20 g Diamond crystal kosher salt
- 7 g Granulated sugar
- 6 g Powdered nutritional yeast (pulverized)
- 1 1/2 Tbsp potato starch
- 1 Tbsp cornstarch
- 1 tsp bay leaf powder (pulverized)
- 1.5 g Prague powder (curing salt)
- 1/2 cup cold water
Directions
- Set your Anova Sous Vide Precision Cooker to 79.5ºC / 175.1ºF
- Mix all spices together and add water to dissolve.
- Prepare your own ground meat or store-bought ground meat
- Mix in the meat and spice mixture by hand for 3-5 minutes to make it homogeneous.
- Assemble in greased loaf pan or cylinder. Press down to remove any air pockets.
- Place in your bag and sous vide for 79.C for 2 hours.
- Remove from bath and let them cool down. Refrigerate for at least 4 hours to overnight.
Finishing Steps
- Fry in a little oil and serve with garlic fried rice/ pickled vegetables or pandesal (buns)
