HK style charsiu pork belly
This is a Char Siu (roast pork) recipe using pork belly. This is a hong kong style/inspired recipe but using a much more tender cut of pork and simpler marinate

Ingredients
- Pork belly 500g
- Scallion
- 4 Garlic cloves
- 1 tablespoon soy sauce
- 2 tablespoon rice wine
- 2 tablespoon hoisin sauce (Lee kum kee brand)
- 2 tablespoon char siu sauce (lee kum kee brand)
- 1 tablespoon sesami oil
Directions
- Make marinade with
Scallions (2 inch lengths and smashed)
Garlic (smashed and peeled)
Soy
Rice wine
Hoisin sauce
Charsiu sauce
Sesami oil
Maple syrup (not too much since we already use charsiu sauce)
- Make sure the pork are manageable length wise, marinate for 1 day in fridge.
Prep water, put pork and some marinade into bag to sv.
- Finish by roasting, don't forget to obtain those dark char bits!
Use a little hoisin sauce + maple syrup and salt to glaze and as finishing sauce.
Goes great with sv soft poach eggs! At the same temp 60c
Finishing Steps
- Use either high heated grill oven or just blow torch it
