Herb Crusted Lamb Racks

Ingredients
- 2 or 3 Racks of Lamb
- 2 tbsp Garlic Oil
- 3 tbsp Dijon Mustard
- 2 tbsp honey
- Salt and fresh ground pepper
- Herbed Crumb Crust Recipe
- 1 cup fine bread crumbs
- 1 cup lightly grated Parmesan cheese
- 3 tbsp finely chopped parsley
- 1 tbsp finely chopped rosemary (or 1/2 tsp dry)
- 2 tbsp freshly ground pepper
- 1/4 cup Garlic Oil
Directions
- 1). Using sharp knife trim all but thin layer of fat
from Racks. Rub garlic oil all over Racks to
to coat.
2). Place Racks in separate bags and place in
Sky’s Vide, at 139 F for 2 hours.
3). Herbed Crumb Crust: in food processor fitted with metal blade, combine bread crumbs, cheese, parsley, rosemary and pepper. With motor running slow, drizzle garlic oil through feed tube to make a sandy paste. Transfer to bowl and set aside.
4). In a small bowl, using a fork, mix together mustard and honey until combined. Set aside.
5). Remove lamb (after 2 hours). Transfer to ice bath and chill for 1 hour.
6). Preheat oven to 275 F.
7). Remove racks and pat dry. Rub mustard mixture over entire lamb until well coated. Press handfuls of bread crumbs into mustard to adhere. Tap racks to remove excess.
8). Arrange Racks in a roasting pan crust side up. Place in oven for 40 minutes.
9). Broil lamb for 2 to 4 minutes until brown. Let stand for 3 minutes, cut and serve.
