Hamburgers / Cheeseburgers-Med Rare
This prepares a few hamburgers for searing on a hot grill or frying pan.

Ingredients
- Hamburger patties (quantity and cut as desired) (I prefer 80-85% lean)
- Chicken broth
- Salt
- Pepper
- Gruyer cheese , thin sliced
- Fresh, ripe tomatoe
- Crunchy lettuce
- French bread or similar, lightly crusted, fresh buns
- Grey Poupon mustard
- Ketchup
- Chips and/or fries
Directions
- Prepare hamburger into patties
- Place each patty in a cooking pouch
- Add a few ounces of chicken broth, enough to cover patty when air is evacuated.
- Submerge each pouch to just above water line, to remove air, and seal pouch.
- Cook to your preference, I cook to 127°, for medium rare centers.
- While the hamburger patties are cooking, prepare the other ingredients.
- When ready to remove patties from water, warm up the grill, or a frying pan, to very high heat.
- Remove each patty, pat dry with a paper towel, add salt and pepper, and place on hot grill or a frying pan to sear.
- Sear each side for 1 to 2 minutes, depending upon how hot the surface is. You want the meat to be nicely browned, but not overcooked internally.
- While the meat is searing, start toasting the buns/bread lightly. Once the first sides are seared, flip and put cheese slices on, cover meat to help melt the cheese, and turn down heat to low.
- Once the cheese has melted, about one more minute, remove each patty and place on bread/bun, with a slice of tomato, lettuce and condiments to preference.
Finishing Steps
- Work quickly to keep the meat as hot as possible, and serve with chips or fries as desired.
