Greek-Style Lemon Roasted Potatoes
This is a recipe for "OPA! Souvlaki Franchise"-inspired Greek-style lemon roasted potatoes (the ones that come with the "OPA! Platter" meal). A great complement with souvlaki. I often roast these on the BBQ with the souvlaki as a finishing step (but you can also use a conventional oven). All you need is a great Greek salad for a full meal!

Ingredients
- 3 pounds potatoes, peeled & cut into wedges
- ⅓ cup olive oil
- 2 lemons, juiced
- 2 teaspoons salt
- 1 teaspoon oregano
- ½ teaspoon ground black pepper
- 2 cubes of chicken bouillon
- 2 cloves garlic, finely chopped
Directions
- Set your Anova Sous Vide Precision Cooker to 188ºF / 86.7ºC
- Peel & cut your potatoes into thick wedges, juice the lemons & crush/mince the garlic.
- In a small bowl, mix olive oil, garlic, lemon juice, oregano, bouillon cubes and pepper.
- Put potato wedges into a large bowl, pour the spice mixture over the potatoes and toss to coat.
- Seal everything in a Vacuum seal bag or simply use a Ziplock bag with a water submersion technique.
Finishing Steps - Grill (or Oven)
- Preheat your Grill (or Oven) to 392°F/200°C.
- Grill for 15-20m or until potatoes have browned to your desired level.
If using an Oven, throw the potatoes on a large tray, give a drizzle of olive oil (optional), split some garlic cloves and throw on top (optional) and roasts for 15-20m or until potatoes have browned to your desired level.
