Greek Garlic Herb Pork Loin

Ingredients
- Pork loin (2 lbs)
- 5 Garlic cloves
- Italian Parsley
- 1 medium onion
- Salt / pepper
- Oregano or greek throubi
- Olive oil
- Butter
- Wine and/or lemon juice
- Corn starch as needed for sauce thickening
Directions
- Set your Anova Sous Vide Precision Cooker to 140.0ºF / 60.0ºC.
- Rub a little olive oil on pork, then season with salt and pepper and oregano or greek “throubi”.
- Cut garlic cloves in half and insert them in different parts of the loin with a knife.
- Cut onion in large chunks and put at the bottom of ziplock bag.
- Finely chop parsley and rub on pork.
- Cook for 2 h in sous vide
- Take out of bag and cut in large chunks. It’s delicious and juicy to eat like this but you can finish it off on the stove (see below)
Searing And Sauce Making
- Melt butter or oil in wide pot and sear the pork.
- Make a sauce with the juices from the bag with some wine and/or lemon, thickening with corn starch as needed. Serve over rice, home fries, or mashed potatoes.
