modified the Garlic-Studded Roast Pork Loin Recipe from the America's Test Kitchen Twentieth Anniversary TV Show Cookbook to be able to cook sous vide.

  1. Set your Anova Sous Vide Precision Cooker to 145ºF / 62.8ºC
  2. Mix thyme, chipolte and cloves together in a small bowl. Add garlic sliced and stir to coat.
  3. Make slits in the 2 pork loins and insert garlic slices. Rub the remaining spices over the meat.
  4. Place in sous vide bag and seal.
  5. Cook in sous vide at 145F for 1 to 4 hours.

  1. Sear on hottest grill for 2 minutes on each side.
  2. Slice into medallions and serve.
