Miso Pork Tenderloin
Pork cooks medium, moderately tender and juicy.
Add an hour to cooking time for frozen pork.

Ingredients
- Pork tenderloin
- 3 tbsp miso paste
- 3 tbsp mirin
Directions
- Place pork tenderloin in sous vide bag and add marinade ingredients. Seal bag and massage pork.
- Place bag in fridge and allow pork to marinate for 6 hours or overnight.
- Heat water to correct temperature with ANOVA. Remove bag from fridge and submerge in water via displacement method.
- Cook until timer on ANOVA beeps.
Finishing Steps
- Remove pork from bag and pat dry with paper towels.
- Heat oil until very hot in a heavy bottomed pan.
- Sprinkle salt and/or pepper on pork as desired.
- Optionally, skip above step and sprinkle with sesame seeds at the end.
- Sear pork for 1 to 2 minutes on each side.
