French style entrecôte
A simple, easy and delicious way to cook some perfect, french style, entrecôte.
I recommend pairing it with homemade french fries as well as hollandaise sauce, of which you can find a great recipe on Food Wishes's youtube channel.

Ingredients
- 500gr entrecôte, two and a half fingers thick
- 1 garlic clove
- 3 generous pinches of fine salt
- 2 generous pinches of fleur de sel
- 1 tbsp. vegetable oil
- Freshly ground pepper
Directions
- One hour before cooking take your meat out and season it with the fine salt on every side.
Leave the meat at room temperature during that time.
- Take one garlic clive and take out the inside germ.
- Vacuum seal your meat with 1/2 garlic clove on each side. Make sure to double seal each side of the bag.
- Cook at 53.9 degrees Celsius for one hour making szre all of the meat is immersed.
- Sear the meat is a smoking hot pan in which you added the vegetable oil.
The first side seared should be the fat cap, giving more taste to the rest of the meat once melted.
Each side should take between 60 to 90 seconds, depending on taste.
- Let the meat rest for a few minutes before slicing it in 1.5 cm thick pieces.
Sprinkle with the fleur de sel and some freshly ground pepper to taste.
