Sous Vide Flan
Your traditional condensed milk flan, in a jar.
This turned out delicious, tall and firm.
I only had 6oz jars but I think 4oz jars would fit these better.

Ingredients
- 3 eggs
- 1 can condensed milk
- 1 can evaporated milk
- 1tsp vanilla extract
- 3/4 cup sugar for glazing the bottom of the jars
Directions
- Add sugar to a pan (preferably non stick) an heat it on low heat, moving the pan once in a while, until sugar is dissolved and golden color.
- While the sugar glaze is still hot, drizzle a little to cover the bottom of six 6oz mason jars. (Might have more if using 4oz jars)
- While the sugar is cooking, beat the eggs, condensed milk and evaporated milk in a bowl.
Add the vanilla.
- Pour flan mixture on mason jars, then steal them tight.
- Cook on sous vide for about 1 hour at 179F
- Remove the jars, then let it cool.
Jars can be refrigerated after that.
