Sous Vide Flan

Your traditional condensed milk flan, in a jar. This turned out delicious, tall and firm. I only had 6oz jars but I think 4oz jars would fit these better.

  1. Add sugar to a pan (preferably non stick) an heat it on low heat, moving the pan once in a while, until sugar is dissolved and golden color.
  2. While the sugar glaze is still hot, drizzle a little to cover the bottom of six 6oz mason jars. (Might have more if using 4oz jars)
  3. While the sugar is cooking, beat the eggs, condensed milk and evaporated milk in a bowl. Add the vanilla.
  4. Pour flan mixture on mason jars, then steal them tight.
  5. Cook on sous vide for about 1 hour at 179F
  6. Remove the jars, then let it cool. Jars can be refrigerated after that.
